Ingredients  (From the video is at 8:35 - 10.35 minutes)


For curry paste  

1 tbsp galangal 

2tbsp fingerroot ginger 

2 tbsp lemongrass 

2 tbsp garlic 

2 tbsp shallots 

2 tbsp dehydrated red chillies  

1 tbsp shrimp paste  

1 Pla Too, Thai mackerel  


How to make curry paste is to pound every ingredient above to paste/ use a food processor to ground the ingredients to paste 


For roast pork 

200 Pork with fat  

1 tbsp of oyster sauce 

1 tbsp of soy sauce 

1 tsp garlic 

1 tsp pepper seeds 

1 tsp coriander 

1 tbsp palm sugar  

½ tsp black soy sauce 


How to make roast pork is to mix all ingredients to make the marinated pork first then add a thin slide of pork to marinate for at least 30 mins then grill it  


Ingredients to make curry  

2 tbsp red curry paste        

1 cup coconut cream                  

1/2 cup coconut milk  

4 Kaffir lime leaves (ripped) 

1 tbsp fish sauce 

½ tbsp palm sugar 

150 g sliced young toddy palm

( please use coconut shoots, parsnips/turnips/best-cooked jackfruits to substitute)

200 g roast pork 


- Add half a cup of coconut cream to the wok  

- When the cream is separated into coconut oil, add the green curry paste to cook in oil till it is well incorporated and the curry paste is fragrant. Add another half cup of coconut cream. Mix it well 

- Add young sliced toddy palm, and roast pork then add coconut milk, and continue cooking for 2-3 minutes to have the meat absorb the curry sauce  

- Add fish sauce and palm sugar 

- Rip off kaffir lime leaves from the stem and add in t the curry sauce  

- Once the kaffir lime is fragrant then serve
